The Fed says, “fillings on the side,” for doughnut makers

On Monday, the U.S. Department of Agriculture’s (USDA) Food Safety and Inspection Service (FSIS) announced tighter restrictions for “stuffed or filled” pastries.

“With immediate effect, all pastries, pies, cakes (including cupcakes) and doughnuts are to be sold and served with the filling ‘alongside’ or ‘in close proximity’ to the product being stuffed.”

Commercial bakers (STUFFERS) may continue to prepare their products (STUFFEES) in accordance with existing USDA, FDA and local regulations, however any puddings, creams, jellies or custards must now accompany the prepared “shell” in a separate packing or serving vessel.

There was no immediate explanation given for the hasty policy change and no media contacts were made available for questions.
